I LOVE Pineapple Upside Down Cake.
I’ve made it as a Bunt Cake, Regular Cake, and Individual Cakes (they just look like cupcakes). Either way is AMAAAAZING!
Anyone who knows me, knows I’m gluten free- not due to fad but due to intolerance in both my daughter and I. So I would make this recipe using Betty Crocker’s Gluten Free Yellow Cake Mix (just to make my life easy).
If I were to do it from scratch, I would use 1-1 oat flour and gluten free flour and treat the rest of the ingredients the same. I would leave out the eggs and possibly add either apple sauce or 1 banana for every egg asked due to my daughter’s allergies. I would also substitute the butter for soy free vegan butter (again due to daughter’s allergies).
