Most of my recipes include banana due to easy of baking for a kid who has LOADS of allergies. Banana pancakes are the easiest. I go between banana pancakes and banana fritters (which I will post the recipe to next week).

Anyway the recipe I like is one I found on Pinterest and that you can view here. Of course, as you know, instead of wheat flour, I use 1/2c oat flour and 1/2c Red Mill Gluten Free All Purpose Flour.

Also, instead of milk (or Almond Milk due to allergies) I use flax seed milk or rice milk
